Ingredients:

1 |    tsp(s) |    Cinnamon |
1/2 |    tsp(s) |    Ginger |
to taste / pinch |    Sea Salt | |
4 |    each |    Apple(s) cored and sliced |
2 |    tsp(s) |    100% Lemon Juice fresh |
2/3 |    cup(s) |    Flour, Whole Spelt |
2/3 |    cup(s) |    Raw Brown Sugar (Turbinado) firmly packed |
1/2 |    cup(s) |    Butter, unsalted cut up |
2/3 |    cup(s) |    Oats uncooked |
2/3 |    cup(s) |    Walnuts or pecans (optional) |
Directions:
Preheat oven to 375F.
For the Apple Filling
1. Combine the sugar, cinnamon, ginger, and salt in a large bowl.
2. Add the apples and lemon juice, tossing to coat.
4. Arrange the fruit in an even layer in a shallow 3-quart glass baking dish.
For Oat Topping
1. Combine the flour and brown sugar in a medium bowl.
2. With a pastry blender or 2 knives, cut in the butter until mixture resembles coarse crumbs.
3. Stir in the oats and walnuts (nuts are optional).
-- Sprinkle Apple Filling with Oat Topping.
-- Bake about 40 minutes or until bubbly.
Serve warm with vanilla ice cream, if desired.
