Ingredients:
1 |    tbsp(s) |    Olive Oil |
1 |    tbsp(s) |    Ginger chopped |
3 |    each |    Garlic cloves, divided, finely chopped |
10 |    ounce(s) |    Spinach fresh - washed |
1/4 |    cup(s) |    Water Chestnuts chopped |
2 |    tbsp(s) |    Nama Shoyu Soy Sauce |
2 |    tbsp(s) |    Sesame Oil |
1 |    tbsp(s) |    Sesame Seeds |
10 |    ounce(s) |    Whole Grain Pasta any shape |
2 |    each |    Onions, Green chopped |
1 |    each |    Lemon(s) cut into wedges |
8 |    ounce(s) |    Shiitake Mushrooms coarsely chopped |
Directions:
1. Bring large pot of water to boil.
2. In a separate, large deep skillet heat olive oil.
3. Add mushrooms and half of the garlic to the oil and cook for about 2 minutes.
4. Add the spinach to the oil and stir until the spinach is wilted and bright green (about 3 minutes).
5. Place the spinach mixture into a food processor.
6. Add the remaining garlic, water chestnuts, ginger, soy sauce and sesame oil then blend and set aside.
7. In a small saucepan cook the sesame seeds until lightly toasted (about 5 minutes).
8. In the boiling water cook your spelt pasta noodles until al dente.
9. Drain pasta and then stir in the pesto.
10. After placing in the serving dish, top with green onions and sesame seeds.
Can be served with lemon wedges to squeeze over individual servings.
