Ingredients:

1/2    cup(s)    Flour, Whole Wheat
3/4    tsp(s)    Sea Salt
2    tbsp(s)    Butter, unsalted
3    tbsp(s)    Butter, unsalted
1    cup(s)    Onion(s) diced
1    cup(s)    Sour Cream, Fat Free
12    each    Tortilla, Corn
2    cup(s)    Chicken w/o Skin , cooked and chopped
4    ounce(s)    Green Chili Pepper(s) chopped
1    tsp(s)    Cumin
2-1/2    cup(s)    Chicken Broth/Stock
1-1/2    cup(s)    Mozzarella, Fresh
1/2    cup(s)    Green Pepper diced


Directions:
1. In a large saucepan cook onion and green pepper in the 2 tbsp of butter until tender
2. Combine onion mixture in a bowl with chopped chicken and green chili peppers - set aside
3. For sauce, in the same pan melt 3 tbsp butter
4. Stir in flour, cumin and salt
5. Stir in chicken broth all at once
6. Cook and stir till thickened and bubbly then remove from heat
7. Stir in sour cream and 1/2 cup of the cheese
8. Stir 1/2 cup of the sauce into the chicken mixture
9. Fill each tortilla with about 1/4 cup of the chicken mixture. Roll and arrange in a 13x19x2 baking dish
10. Pour remaining sauce over and sprinkle with remaining cheese
11. Bake uncovered in a 350F oven for abut 25 minutes or until bubbly.
Note: Because corn tortillas tend to break easily we layered more like a lasagna. This dish can be made ahead of time and frozen: Place a large sheet of heavy duty foil in the baking dish with enough foil over the ends to fold up and over the whole dish. Prepare the casserole but do not bake. Freeze it solid. Remove the frozen casserole from the dish and use the excess foil to wrap it well. You can then remove the frozen, foil wrapped casserole and place in a Zip Lock or Sealed bag (this frees up your dish for other things). When you're ready to bake, remove the bag and the foil and place in original dish. Thaw then bake as directed.
