Ingredients:
1/2 |    tsp(s) |    Sea Salt |
2 |    cup(s) |    Rice cooked, wild or brown |
3/4 |    cup(s) |    Raisins |
1 |    cup(s) |    Water |
3/4 |    cup(s) |    Onion(s), White chopped |
2 |    tsp(s) |    Garlic 1 clove, minced |
to taste / pinch |    Pepper, Black | |
3/4 |    cup(s) |    Celery chopped |
3 |    tsp(s) |    Curry Powder |
1/2 |    cup(s) |    100% Apple Juice |
1 |    pound(s) |    Lamb lean, boneless, cubed |
4 |    tsp(s) |    Cornstarch |
Directions:
1. Spray a large cold saucepan with Olive Oil cooking spray & preheat over medium heat.
2. Brown half the meat, remove from the saucepan. Add remaining meat, onion, curry powder & garlic to saucepan; cook until meat is brown.
3. Return all meat to saucepan, stir in water & apple juice. Add celery, raisins, salt & pepper.
4. Bring to a boil; reduce heat. Cover & simmer for 45 to 60 minutes.
5. Stir cornstarch into 2 tablespoons water; add to mixture. Cook & stir until mixture is thickened & bubbly. Serve over hot rice.
