Ingredients:

1/2    tsp(s)    Sea Salt
2    cup(s)    Rice cooked, wild or brown
3/4    cup(s)    Raisins
1    cup(s)    Water
3/4    cup(s)    Onion(s), White chopped
2    tsp(s)    Garlic 1 clove, minced
to taste / pinch    Pepper, Black
3/4    cup(s)    Celery chopped
3    tsp(s)    Curry Powder
1/2    cup(s)    100% Apple Juice
1    pound(s)    Lamb lean, boneless, cubed
4    tsp(s)    Cornstarch


Directions:
1. Spray a large cold saucepan with Olive Oil cooking spray & preheat over medium heat.
2. Brown half the meat, remove from the saucepan. Add remaining meat, onion, curry powder & garlic to saucepan; cook until meat is brown.
3. Return all meat to saucepan, stir in water & apple juice. Add celery, raisins, salt & pepper.
4. Bring to a boil; reduce heat. Cover & simmer for 45 to 60 minutes.
5. Stir cornstarch into 2 tablespoons water; add to mixture. Cook & stir until mixture is thickened & bubbly. Serve over hot rice.
