Agave Nectar
It’s good to have options when you’re looking for a sweetener. Some are definitely better than others. This week I’d like to tell you about one that you may not have heard of before.
Blue Agave nectar is produced from organically grown and processed blue agave plants. The “Weber Azul” is a cactus-like plant that grows in Mexico and is also used to make tequila. It’s a fructose, honey-like syrup that enhances food’s natural flavors. Because the raw blue agave is processed below 118 degrees F the natural agave enzymes are preserved, adding rich flavor. It’s 25% sweeter than sugar so less is needed and it dissolves quickly. It’s gluten-free and vegan appropriate.
Organic Raw Blue Agave doesn’t give you a blood sugar spike. It rates at a low 10 on the Glycemic Index (enter agave nectar at www.glycemicindex.com).
